Ishibashi from our Kyoto store introduces “Ume Balsamic Sauce,” the perfect pairing for roast chicken. It also complements prosciutto salad and pork dishes—an ideal addition to your Christmas dinner.

クリスマスチキンをプロの味に!簡単「梅バルサミコソース」

Hello everyone,
This is Ishibashi from our Kyoto store.

December has arrived, and with less than a month left in the year, the cold weather is settling in. How are you spending these chilly days?

Today, I’d like to share a recipe for Balsamic Sauce with Ume Fruit, a simple yet elegant sauce that elevates Christmas roast chicken to a professional-level dish.

It’s very easy to make—just simmer three seasonings with ume syrup in a frying pan, and you’re done. This sauce also pairs wonderfully with prosciutto salad and pork dishes, so please enjoy it in different ways.

【Recipe】(Cooking time: 10 minutes)

  • 3 tbsp balsamic vinegar
  • 3 tbsp water
  • 1.5 tsp soy sauce
  • 3 tbsp ume syrup
  • 1 tbsp sugar
  • 3  infused  ume

1.Remove the pits from the  infused  ume and chop finely.

2.Place all ingredients in a frying pan and simmer over medium heat until slightly thickened.
Tip: The sauce thickens further as it cools, so avoid over-reducing.

Pairing Suggestion: Umeshu with Soda in a Champagne Glass

For a Christmas dinner with a touch of extra care, why not serve your umeshu with soda in a champagne glass? The elegant presentation makes the evening even more special.

Thank you very much for reading our recipe blog throughout this past year. Please take good care of yourselves, and I wish you all a wonderful New Year.

In 2026, we’ll continue to share “My Favorite” seasonal recipes—please look forward to them.

Wishing you a Happy New Year!
