Time flies—it’s already been a month since the new year began.
I love chocolate so much that I want to eat it every day! Though I usually hold back for health reasons, around this season I can’t resist visiting department store Valentine’s events and end up buying all kinds of chocolates.
For today’s recipe, I’d like to share Umeshu Bonbons. Using your own homemade umeshu, you can create a truly original bonbon. The tartness of umeshu pairs perfectly with the sweetness of chocolate.
【Recipe】 (Makes 12 pieces / Cooking time: 120 minutes)
- 24ml umeshu
- 120g chocolate
1.Finely chop the chocolate. Place one-third in a bowl and melt over a double boiler (water should be about body temperature).
2.Spread the melted chocolate into molds and chill in the refrigerator for 15 minutes.
3.Once the chocolate has set, add 2ml of umeshu to each mold.
Tip: Be careful not to overfill with umeshu.
4.Melt the remaining two-thirds of the chocolate in a double boiler and spread it thickly onto parchment paper.
5.Place this layer on top of the molds, smooth with a spatula, and refrigerate until firm (about 1 hour).
6.Once fully set, remove from the molds—done!
