Today, I’d like to introduce a recipe for Ume Jelly Dressing.
Spring is the season when vegetables are especially delicious—from slightly bitter and aromatic greens like nanohana and celery, to sweet spring cabbage and fresh onions.
A dressing that’s too sour can overpower the natural sweetness of these vegetables, so in this recipe, I’ve highlighted the gentle sweetness of ume syrup.
【Recipe】(200g / Cooking time: 15 minutes, excluding chilling)
- 180ml ume syrup
- 40ml vinegar
- 40ml olive oil
- 1 tsp agar powder
1Combine ume syrup, vinegar, and agar in a pan. Bring to a boil, then stir for 1 minute.
2.Chill in the refrigerator until set.
3.Once set, mix in the olive oil.
With its vivid color and gentle flavor, this dressing perfectly captures the freshness of spring. Please enjoy it with your seasonal vegetables.
