“Ume Yogurt Panna Cotta” – Light, smooth, and refreshingly tart

Hello, this is Sato, Ume Concierge at the Kyoto store.

The rainy season is just around the corner.

Today’s recipe is a refreshing dessert that lets you enjoy the flavor of ume at its peak in June!

With the tartness of yogurt and ume, it makes for a light and refreshing treat.


【Recipe】(Serves 3 / Cooking time: 20 minutes, excluding chilling time)

  • 100 ml ume syrup
  • 3 infused ume
  • 120 g yogurt
  • 3 g powdered or sheet gelatin
  • 150 g fresh cream
  • 25 g granulated sugar
  • Mint (for garnish)

1.Cut the leftover ume and mash into a paste with a knife. (Remove the skin if it remains.)


2.Soak the gelatin in water (according to the amount indicated on the package).

3.In a heatproof bowl, combine fresh cream and granulated sugar. Cover with plastic wrap and microwave for 1 minute.

4.Stir until the sugar dissolves, then add the soaked gelatin and yogurt. Mix well.


5.Once slightly cooled, pour into cups and refrigerate until set. Top with ume syrup, the ume paste from step 1, and garnish with mint.


By using agave syrup, you can create a lighter syrup with a clean aftertaste.

Depending on the ume you use, you’ll enjoy different flavors—making this dessert perfect for early summer.
