“Ume & Green Shiso Sherbet” – A cool and refreshing summer delight

The days have been hot and humid lately.

On such sweltering summer days, nothing is more tempting than a cold dessert!

Today’s featured recipe is a sherbet that combines the fruity, refreshing flavor of Orihime ume with the vibrant freshness of green shiso—a perfect treat for the summer season.


【Recipe】(Serves 2 / Cooking time: 15 minutes, excluding freezing time)

  • 5 tbsp ume syrup
  • 2 infused ume  
  • 250 ml water
  • 10 green shiso leaves
  • 1 tbsp lemon juice

1.Dilute the ume syrup with water.

2.Julienne the green shiso leaves, then blend together with the syrup mixture in a blender.

3.Once the shiso is well incorporated, add lemon juice. Transfer to a zip-lock bag and place in the freezer.

4.Before it freezes completely, knead by hand to create a sherbet texture.
(For a smoother texture, you can blend it again after freezing.)

5.Serve in bowls and top with the ume.

With the fruity ume syrup, refreshing green shiso, and lemon juice, this sherbet has an extra burst of freshness—making it a light and cooling dessert.
