Refreshing for Early Summer! Ume Mojito & Infused Ume with Cream Cheese

Hello everyone,
I’m Ishibashi, store manager at Choya Kyoto, a shop dedicated to the ume-making experience.

Today, I’d like to introduce two recipes perfect for the early summer season: a refreshing Ume Mojito made with ume syrup and  infused  ume, and a rich yet easy side dish, infused Ume with Cream Cheese.

As the days grow warmer and more humid, there’s nothing better than a cool ume recipe to help you unwind after a long day of work or house chores.

The fresh aroma of ume syrup combined with mint and lime, topped with soda, makes for the ultimate thirst-quencher.

The best part about making cocktails at home is that you can adjust the vodka and white rum to suit your mood—whether you prefer something light or something stronger. And of course, there’s also a non-alcoholic version!


漬け梅のクリームチーズ和え

【Ume Mojito】

  • 20ml ume syrup
  • 10ml vodka (5ml for a lighter version)
  • 10ml white rum (5ml for a lighter version)
  • 1 slice lime
  • 5 mint leaves
  • 100ml soda

※Non-alcoholic version: Replace vodka and rum with extra soda.

【Infused Ume with Cream Cheese】

  • 3 infused ume
  • 10g mixed nuts
  • 60g cream cheese
  • 3 crackers
  1. Remove the seeds from the infused ume and chop finely.
  2. Roughly chop the mixed nuts.
  3. Mix (1) and (2) well with cream cheese.
  4. Spread on crackers and enjoy!

Tip: Let the cream cheese soften slightly at room temperature before mixing for a smoother texture.
