The shortest rainy season on record has ended, and summer is now in full swing. The heat continues day after day—how are you spending these hot days? I try to avoid walking around Kyoto during the daytime and instead go out when it’s a little cooler.
Today, I’d like to share a recipe that’s perfect for hot summer days: Ume Sherbet made with infused ume and ume syrup.
Simply mix ume syrup with water and freeze—it’s that easy! This is a simple recipe you can even make together with children during summer vacation.
Don’t forget to use the infused ume fruit as well, so you can enjoy the full flavor of ume.
And my personal favorite topping? Sweet red beans (azuki)! The refreshing taste of ume combined with the gentle sweetness of azuki makes it a perfect way to soothe a tired summer body.

【Recipe】(Cooking time: 210 minutes (including freezing))
- 3 infused ume
- 120ml ume syrup
- 120ml water
- Azuki beans (as desired)
How to make
- In a shallow tray, combine water and ume syrup. Freeze until solid (about 180 minutes).
- Scrape with a spoon to break into flakes, then mix in finely chopped infused ume. Return to the freezer until firm (about 30 minutes).
- Serve in small bowls and top with azuki beans to taste.
