Addictively sweet and sour! Pickled ume jam

クセになる甘酸っぱさ!漬け梅で作る梅ジャム

Hello everyone,
I’m Nakao, the ume concierge at our Kamakura store.

Today, I’d like to share a recipe for ume jam, made with the  infused  ume left after enjoying your drink. It has a naturally pleasant sweet and sour taste.

Ume contains plenty of pectin, a natural thickening agent, which allows you to make homemade jam without adding anything extra.

Ingredients

  • 3  infused  ume (Choya Ume Kit, medium size)
  • 15g sugar
  • A little lemon juice

How to make 

  1. Remove the seeds from the  infused  ume and chop finely.
    For ume with firmer flesh, a mill makes it easier.
  2. Combine with sugar and lemon juice, then let it rest for 30 minutes.
  3. Heat over medium until it just begins to boil—and it’s ready!

Tip

If it boils too vigorously, the jam may set too firmly. For the best texture, remove it from the heat once bubbles begin forming gently around the edges of the pot.
