As we linger in the afterglow of cherry blossoms, the first signs of early summer are quietly making their way in.
Today’s recipe is Ume Carrot Rapé, a refreshing dish that highlights the natural sweetness of fresh carrots, perfectly balanced with the sweet-tart flavor of ume syrup.
【Recipe】(Serves 2 / Cooking time: 20 minutes )
- 2 tbsp ume syrup
- 3 leftover ume from umeshu or ume syrup
- 2 carrots (300 g)
- 1.5 tbsp vinegar
- 1 tbsp olive oil
- 1.5 tsp lemon juice
- Salt (to taste)

1.Peel the carrots and slice thinly with a slicer. (You can also julienne them.)
2.Sprinkle lightly with salt, let sit for about 10 minutes, then squeeze out the excess moisture.
3.In a separate bowl, combine olive oil, vinegar, lemon juice, ume syrup, salt, and black pepper to make the dressing.
4.Remove the pits from the ume, chop finely, and mix into the dressing.
5.Toss the carrots with the dressing, and it’s ready to serve.
