“Quattro Formaggi-Style Toast” – A sweet & savory twist with ume syrup

Today’s recipe is a toast-style take on the Italian favorite Quattro Formaggi!

Normally made with pizza dough, this dish features a generous mix of cheeses topped with honey and black pepper.
Here, we swap pizza dough for toast, and honey for ume syrup. The balance of salty and sweet-tart flavors is simply irresistible.

【Recipe】(Serves 1 / Cooking time: 5 minutes

  • 3 tbsp ume syrup
  • 1 leftover ume from umeshu or ume syrup
  • 1 slice bread
  • Cheese of your choice (enough to cover the bread)
  • 1 tbsp butter
  • Black pepper (to taste)

    1.Mash the ume and set aside the flesh.

    2.Spread butter on the bread and top generously with cheese.

    3.Toast until the cheese is bubbly and slightly browned.

    4.Drizzle with ume flesh and ume syrup.


    5.Finish with a sprinkle of black pepper to taste.
