I’m Watanabe, the ume concierge at our Kamakura store.
Even in September, the lingering humidity can sometimes leave us saying, “I just don’t have much appetite…”
On days like that, why not turn to the gentle nourishment of whey and ume syrup?
Whey is the clear liquid that separates when making strained yogurt. It’s rich in protein and other nutrients, and easily absorbed—a true treasure that’s too valuable to throw away.
When combined with the fruity sweet-and-sour flavor of ume syrup, it transforms into a refreshing drink that gently awakens your body, even in the lingering summer heat.
[Recipe] (1 cup / 10 minutes required )
- 50ml whey
(Approximately 50ml of whey will separate from 100g of plain yogurt.) - 50ml milk (or soy milk)
- 30ml ume syrup
1. Set a filter in a dripper, just as if you were brewing coffee, and pour in the yogurt.
2. Leave it in the refrigerator overnight to separate the strained yogurt and whey.
3. Combine 50ml whey with 50ml milk (or soy milk). Add 30ml ume syrup and mix well—and it’s ready!
Enjoy a cup filled with the refreshing sweet-and-sour taste of ume syrup to help you feel light and energized through the late summer heat.
For an extra touch, chop up some pickled ume and add it in—you’ll experience the full deliciousness of ume itself.
And don’t forget, the strained yogurt can also be enjoyed with chopped ume mixed in, or spread on crackers for an easy, deli-style dip.
